Product Description

vintage AOP Côtes de Provence

Mise en bouteilles : at the property from March 2016

The harvested grapes were crushed, destemmed and left to maceration in vats for roughly 3 to 6 hours depending on the grape varieties.

The free-run liquid extracted from this maceration was blended after Vinification with the must from the first pressings, and after cold racking (15°C), the musts fermented for roughly  two weeks at 17°C. The assemblages were selected after filtering.

Bottling takes place throughout the year, with a quality of rosé that is blended before bottling.

  • Climatic conditions : humid winter and spring , hot and dry in June ; a rain end of July and two rains in August enabling a good maturity in our area . Start for grape picking 9th September, interrupted by rain on 13th September, have made compulsory to wait until grape recover from the rain to start picking again, and finally  to end  mid October .Very healthy crop.
  • Tasting : a delicate pale pink colour; red fruit nose (strawberries). In the mouth you experience the freshness and sharpness of the strawberries; mouth-watering volume.
  • Food matches : goes well with salads, spicy dishes. Blends beautifully with many Provencal flavours based on garlic, olive oil and basil, and also with Asian cuisine.
