Bottling by the producer on the estate
Traditional vinification, separate grape varieties.
Fermentation on the skin for 15 days at 28° C.
Blending of grape varieties after fermentation (syrah – cabernet – grenache).
Storage in vat 16 months before bottling.
Blending with grenache occurs occasionaly when accurate concentration (yield <35 hl/ha).
This wine should get its structure rounder, thanks to its body and flavour complexity.
Bottling in March 2003.
“Clarendon” was the penname of Bernard GAVOTY, the famous French music critic in “LE FIGARO”.
- Tasting : nose : complexe already : red berries, spices.
mouth : volume.
Will gain roundness and flesh, within 2 years. Good structure (fine and balanced tannins).Nose in balance with palate .
To be tasted with grilled meat at first. Will evolve with secondary flavours (within 2 years) and should accompany then, gamy flavours : meat with sauce.
Terroir will arise within 2 or 3 more years. - Evolution : 10 years.
