Traditional vinification, separate grape varieties.
Fermentation on the skin for 15 days at 28° C.
Blending of grape varieties after fermentation (syrah – cabernet ).
Storage in vat 24 months before bottling.
“Clarendon” was the penname of Bernard GAVOTY, the famous French music critic in “LE FIGARO”. (1940-1980)

mouth : very charming with smooth tannins already :
Instant pleasure : to drink now !
Good structure (fine and balanced tannins).Nose in balance with palate .
To be tasted with grilled meat (duck) or spicy lamb .
Terroir will arise within 2 or 3 more years.
